This rosemary oil is made by Il Bottaccio in Tuscany. Officially, it's a condiment based on extra virgin olive oil with rosemary: a small bottle to directly add herbiness and depth to your dishes.

For the concentrate, Il Bottaccio uses the Contemporaneo method. Fresh rosemary and olives go into the mill together, so that the fragrant oils from the herb are directly infused into the olive oil. This concentrate is then mixed with extra virgin olive oil.

This pairs well with Tuscan cuisine, where rosemary and olive oil naturally come together. Think of oven-roasted potatoes, focaccia, grilled vegetables, meat, chicken, and beans. Simple dishes, but made with good ingredients. This oil is precisely made for that.
