Herkomst en achtergrond
This rosemary oil is made by Il Bottaccio in Tuscany. Officially, it's a condiment based on extra virgin olive oil with rosemary: a small bottle to directly add herbiness and depth to your dishes.
For the concentrate, Il Bottaccio uses the Contemporaneo method. Fresh rosemary and olives go into the mill together, so that the fragrant oils from the herb are directly infused into the olive oil. This concentrate is then mixed with extra virgin olive oil.
This pairs well with Tuscan cuisine, where rosemary and olive oil naturally come together. Think of oven-roasted potatoes, focaccia, grilled vegetables, meat, chicken, and beans. Simple dishes, but made with good ingredients. This oil is precisely made for that.
Smaak & gebruik
This oil has the distinctive aroma of fresh rosemary, with a delicate extra virgin olive oil base. It instantly transports you to the Mediterranean! The flavour is herbaceous and savoury, without being overpowering.
Use it cold or add it just before serving. This oil works particularly well with potatoes, focaccia, white and red meat, chicken, lamb, grilled vegetables, beans, mushrooms, and oven dishes.
Italian Tradition: Rosemary is the quintessential herb of the Tuscan hills. Since Roman times, this combination has been praised with roasted meats and oven-baked lamb dishes. It was one of the first herbal infusions the Romans used to give their olive oil a savoury, earthy character.
Dutch Cuisine: The ultimate match for baked potatoes from the oven or pan. Also try it over a classic beef stew, a game casserole or drizzle it over your steak immediately after cooking for that delicious aroma. Also surprisingly good over a hearty Dutch bean casserole.
For hot dishes, it's best to use it at the end. A few drops over oven-baked potatoes, grilled vegetables or meat immediately release that familiar rosemary scent. Heating it in the pan is less logical, as that very scent evaporates more quickly when heated.
Kwaliteit & analyse
The quality here lies mainly in the way the rosemary concentrate is made. Il Bottaccio uses the Contemporaneo method where fresh rosemary and olives go into the mill together.
As a result, the rosemary is not just added as a flavouring, but truly absorbed into the oil.
