Herkomst en achtergrond

Caixeiro Signature is an organically certified extra virgin olive oil from Trás-os-Montes, a protected PDO region in northeastern Portugal. The oil is produced by Caixeiro, a small-scale family business that makes a maximum of 3,000 bottles per harvest. More about Caixeiro in Our Farmers.

The blend consists of traditional Portuguese olive varieties: Cobrançosa, Madural, and Verdeal Transmontanas. Together, they yield a mildly fruity oil with green notes, subtle bitterness, and a slightly peppery finish.

The olives are hand-picked and pressed within 12 hours of harvesting. This helps to preserve their flavor, aromas, and natural antioxidants. The acidity level is below 0.14%, well below the maximum 0.8% for extra virgin olive oil.

This is primarily an accessible oil for daily use in the kitchen and at the table. Gentle enough for frequent use, but with enough character for salads, vegetables, bread, pasta, and warm dishes.

Caixeiro Signature is mildly fruity, slightly grassy, and subtly peppery. The oil is not extremely bitter or pungent, making it suitable as a staple oil in the kitchen.

Use this olive oil cold over salads, raw or grilled vegetables, bread, pasta, and soup. It also works well as a finishing oil on the plate, precisely because its flavor is present without being overpowering.

This extra virgin olive oil is also suitable for hot preparations. You can easily bake, fry, and roast with it at normal kitchen temperatures. Extra virgin olive oil is stable when heated and therefore doesn't just have to be used cold.

This olive oil is organically certified and originates from the protected PDO region of Trás-os-Montes. The acidity is below 0.2%, well below the legal limit of 0.8% for extra virgin olive oil. The oil is partially filtered: impurities have been removed, while flavor and natural properties are preserved.
