Herkomst en achtergrond

This Tuscan lemon oil is made by Il Bottaccio. Officially, it is a condiment based on extra virgin olive oil with lemon: a small bottle to add freshness to dishes just before serving.

Lemon and olive oil have long been staples in Italian cuisine. There is even an Italian tradition of citrus oil, often called agrumato, where citrus and olive oil come together in one condiment.

An interesting detail: modern agrumato became famous when the Ricci family from Abruzzo started processing citrus and olives together in the late 1980s. Sometimes an old culinary idea only later becomes a product that conquers the world.

Il Bottaccio makes this lemon oil in its own way. First, a concentrated lemon oil is produced (the Contemporaneo method), which is then blended with extra virgin olive oil. This results in a delicate olive oil with lemon: fresh, well-rounded, and ready to use at the table.

Smaak & gebruik

Smaak. Helder, fris en levendig met de zachte ondertoon van Toscaanse extra vierge olijfolie. De citrus is duidelijk aanwezig, maar blijft vriendelijk en goed doseerbaar. De smaak is zachter en meer complex en dan citroensap.

Gebruik deze citroenolie koud of voeg hem toe vlak voor het serveren. Hij past goed bij vis, schaal- en schelpdieren, rauwe vis, carpaccio, salades, groene groenten, gekookte aardappelen, asperges, broccoli, sperziebonen en brood.

Bij warme gerechten gebruik je hem het best op het einde. Een paar druppels over rijst, gegrilde vis, warme groenten of aardappelen geven meteen frisheid. Verhitten in de pan is minder logisch, omdat juist de frisse citroengeur dan sneller vervliegt.

In Italië is Olio al Limone de onbetwiste koning van de zomerse keuken. Omdat de citroenschillen zijn meegeperst, krijg je de aromatische oliën en de frisse geur van de citroen, zonder de agressieve zuren van het sap.
