CaixeiroOrganic, like the Signature, is a Organically certified extra virgin olive oil produced in the PDO/PDO region of Trás-os-Montes in northeastern Portugal. This mountainous, rural region is home to many small villages and a peaceful, natural environment. The combination of altitude, wide temperature variations, mineral-rich soils, and clean air creates the foundation for olive oil with a clear origin and a balanced character.

The oil is produced by Caixeiro (Soresa) , a family-owned company that consciously chooses small-scale production over mass production. Each harvest is handled individually, and production is limited to a maximum of 3,000 bottles , ensuring control, consistency, and attention to quality at every step of the process.

Like the Signature, this Caixeiro Organic is a carefully composed blend of traditional Portuguese olive varieties characteristic of this region: Cobrançosa, Madural, and Verdeal Transmontanas , but with different compositions and harvest times. Together, they produce a mildly fruity extra virgin olive oil . A Portuguese extra virgin olive oil like this is less bitter than, for example, an Italian olive oil. This is due to the differences in soil, different olive varieties, and other conditions.

The olives are harvested by hand and pressed within 12 hours of picking , a crucial step in preserving their flavor, aroma, and quality. With a very low acidity of less than 0.2%, this oil easily meets the strictest standards for extra virgin olive oil.
