Balsamic vinegar from Modena is a world unto itself. Just like with wine and extra virgin olive oil, there are significant differences in origin, composition, aging, taste, and quality.
This is not, by the way, Aceto Balsamico Tradizionale di Modena. That is a different, much more expensive category with its own rules and long aging. This Balsamico di Modena IGP is officially protected but intended for broader daily use.
Some balsamic vinegars are simple and sharp, others are much rounder, more complex, or distinctly fresh. The name on the label doesn't tell the whole story, but Aceto Balsamico di Modena IGP is an important basis: the product falls within a protected geographical indication with rules for origin and production.
This organic Balsamico di Modena IGP from Oilalà naturally comes from Modena, Italy. According to the official IGP rules, the composition, processing, and aging must take place within the provinces of Modena or Reggio Emilia. The base consists of grapes from Modena, harvested in August and September. The balsamic then ages in oak barrels.
Oilalà opts for an organic version within the Maioliche line. It is therefore not a general balsamic dressing, but a true Aceto Balsamico di Modena IGP Bio: fresher and more classic than a sweet balsamic cream, with clear origin and an officially protected category as its basis.

For Balsamico di Modena IGP, there are fixed rules for composition and production. The base consists of grape must and wine vinegar. Grape must is the juice of pressed grapes, including the natural sugars, acids, and aromas from the grape, and it is boiled down. It is essentially the stage before wine.
At least 10% wine vinegar is added to the grape base, plus a portion of vinegar that has matured for at least 10 years. After that, the balsamic must mature for at least 60 days in wooden barrels before it can be sold as Aceto Balsamico di Modena IGP.
This organic balsamic from Oilalà is made with cooked organic grape must and organic wine vinegar. Oilalà states that the grapes come from Modena, that the balsamic matures in oak barrels, and that the acidity is 6%.
