Cold Preparations with EVOO

- Salads - Think of tomato, cucumber, radish, cabbage, carrot, green salad or watermelon with cucumber, avocado, EVOO, and balsamic.
- Bread - Good bread with EVOO and sea salt is simple and classic.
- On your sandwich - Use EVOO as an alternative to butter, for example, with tomato, cheese, hummus, or avocado.
- Pesto and tapenade - EVOO adds creaminess, flavor, and a beautiful texture.
- Over mozzarella, burrata, or tomato - A good EVOO completes the dish.
- In cold soups - Gazpacho and other cold vegetable soups become richer and fuller with EVOO.

Warm Preparations

- Use regularly after opening - EVOO is a fresh product. Don't save it for later, but use it.

- Finishing touch - Over soup, grilled fish, pasta, risotto, beans, vegetables, or meat.

Dutch Dishes with EVOO
- Stamppot (mashed potatoes with vegetables) - Replace butter with EVOO, or use EVOO as a base and a small knob of butter for flavor.
- Pancakes - Fry them in EVOO. If desired, you can still use butter as a topping at the table.
- Fried potatoes - Wedges or slices with EVOO, rosemary, garlic, and sea salt.
- Fish - Cod, salmon, plaice, or sea bass fry excellently in EVOO.
- Meat - Steak, chicken, and meatballs can be perfectly fried in EVOO. Butter can be added at the end for extra flavor if desired.
- Vegetables - Broccoli, cauliflower, carrots, leeks, onions, and mushrooms gain more flavor with EVOO.
Baking & Frying in EVOO
Practice: gentle frying 140-170°C · pan-frying 170-190°C · oven 180-220°C · deep-frying 175 - 185 °C
- Frying - Use EVOO as you would normally use butter or sunflower oil. Think of eggs, fish, chicken, steak, vegetables, and potatoes. Many chefs first rub the meat with EVOO and then put it in a hot pan. With other oils, that isn't always as tasty, but with EVOO it is!
- Roasting - Start with EVOO. Optionally, add a small amount of butter at the end for extra flavor.
- Pan-frying - Use a layer of about 0.5-1 cm of EVOO for things like eggplant, zucchini, schnitzels, fish, or potato slices.
- Deep-frying - For kibbeling (fried fish pieces), patatas bravas, falafel, or zucchini fritters, you can use a deeper layer of EVOO, for example, 2-4 cm in a pan.
- Reusing oil - Strain the oil after use and reuse it as long as the oil smells clean, is not burnt, and has not changed color significantly. Reuse a maximum of 5 to 6 times. Tip: filter used oil through a coffee filter!
- Roasting - Use about 2-3 tablespoons (30-45 ml) of EVOO per 500 grams of vegetables such as potatoes, carrots, cauliflower, or bell peppers.
- Temperature - Good EVOO can easily be heated up to 210°C, and even slightly higher if not left for too long. This is more than sufficient for all kitchen applications, such as caramelizing meat. For most deep-frying applications, around 175-185°C works well. Do not let the oil smoke unnecessarily.
- Smoke point - The smoke point alone says little about quality. Fresh extra virgin olive oil contains antioxidants and is very suitable for baking and frying in normal home use. The smoke point is often used in marketing to promote refined oil, but the smoke point says nothing about oxidation! Refined oil is already unhealthy in the bottle; the fact that refined oil can withstand 210-220°C, just like good EVOO, says nothing about whether the oil is healthy.
Recipes
In these recipes, 1 tbsp means about 15 ml and 1 tsp means about 5 ml. With EVOO, it doesn't have to be exact to the milliliter: a little more or less is usually not a problem.
EVOO doesn't just have to be Spanish, Greek, or Italian. The Dutch kitchen, too, is perfect for more use of extra virgin olive oil.
Help! Which EVOO can I use for what? Fortunately, it's very easy: all good quality EVOO is suitable for both warm (baking, roasting, and frying) and cold use. Our tip: with warm use, some of the flavor and polyphenol content will be lost, so use a good quality, but affordable EVOO for warm use.
Endive Stamppot with Extra Virgin Olive Oil · 4 servings · 30 min
Ingredients
- 1 kg floury potatoes, peeled
- 300 g endive, finely chopped
- 4 tbsp extra virgin olive oil (approx. 60 ml), plus extra for serving
- 1 tsp Dijon mustard (approx. 5 ml)
- Sea salt and black pepper
- Optional: 50 ml cooking liquid and a small knob of butter for extra creaminess
- Optional: add smoked sausage or other meat
Preparation
- Boil the potatoes in salted water for 15-20 min until tender. Reserve some cooking liquid.
- Mash the potatoes with EVOO, mustard, and a splash of cooking liquid until creamy.
- Stir in the endive so it wilts slightly.
- Season with salt and pepper.
- Optionally, add a small knob of butter, but keep EVOO as the base.
- Serve with an extra drizzle of raw EVOO on top.
Roasted Vegetables with Herbs · 4 servings · 35-40 min

Can you deep-fry in extra virgin olive oil?
Yes. Especially for home use, this works excellently. Think of potatoes, fish, zucchini, eggplant, and falafel. Keep the temperature stable and do not let the oil smoke unnecessarily.
Do I have to replace butter completely?
