The honey comes from a small-scale Portuguese beekeeper in a mountainous, forested and rural region with open nature and clean mountain air. The wild lavender blooms in this region roughly from March to June, sometimes longer. This honey is not heated and not industrially filtered. The flavor profile is mild, lightly floral and not distinctly lavender. A truly mild floral honey. Suitable for bread, yogurt, quark, cheese, nuts, tea, dressings, marinades, sauces and hot dishes.
