The olives are harvested early and processed with a focus on a high content of natural polyphenols and bioactive compounds. Holiston is analysed and comfortably meets the official EU health claim for olive oil polyphenols. The oil is unfiltered, but clear after resting in tanks, and is independently tested every year for pesticide residues, with no detectable residues found. Holiston won a Gold Award at the Dubai Olive Oil Competition 2026 and was named EVOO of the Year 2024 in the World Ranking Extra Virgin Olive Oil. The flavour profile is green, fresh and medium fruity, with notes of fresh grass, artichoke, green tomato leaf and unripe almond, medium bitterness and a clear peppery kick.
